Roasted Garlic Soup
Serves 4
Garlic is not only delicious, but it also helps to strengthen the immune system. It is anti-bacterial, anti-viral, and anti-fungal. Prepare this tasty and nutritious soup the next time you feel a cold or flu bug coming on.
4 Bulbs Garlic
¼ Cup Olive Oil + 2 Tbsp. Olive Oil
1 Red Onion, chopped
4 Cups Chicken or Vegetable Broth
Sea Salt and Freshly Ground Pepper, to taste
Cut 1/4 inch off the top of each garlic head.
Place in a small, shallow baking dish. Drizzle ¼ cup olive oil over. Bake at 350° until golden, about 1 hour.
Cool slightly. Press individual garlic cloves between thumb and finger to release. Chop garlic.
Heat remaining olive oil in pot over medium heat, add garlic, and onion; sauté until onion is translucent, about 5 minutes.
Mix in broth, simmer for about 20 minutes, stirring occasionally.
Ladle into bowls, season with a little salt and pepper and enjoy warm.
