Chilled Tomato Soup
This cold soup is easy to make, healthy and delicious! Not only does the high fiber content found in the vegetables help to decrease cholesterol, the antioxidants reduce risk of heart disease and cancer. It is perfect as a snack or lunch on a hot summer day.
3 Tomatoes, chopped
1 English Cucumber, finely diced
1 Yellow Pepper, seeded & finely diced
1/4 Cup Red Onion, finely diced
2 Garlic cloves, peeled & minced
3 Cups Vegetable Broth
1 Tbsp. Olive Oil
Juice of Half a Lemon
1 Tbsp. Fresh Basil, finely diced, or 1 Tsp. Dried Basil
Combine everything in a bowl or pitcher.
Season with sea salt and freshly ground black pepper to taste.
Refrigerate until ready to serve.
