Chilled Tomato Soup

Serves 4

This easy to prepare recipe is loaded with nutrients and flavour. The high fiber content helps improve digestion and decrease cholesterol while the antioxidants reduce the risk of heart disease.

  • 3 Tomatoes, seeded and diced

  • 1 English Cucumber, finely diced

  • 1 Yellow Pepper, seeded & finely diced

  • 1 Celery Stalk, finely diced

  • 1/4 Cup Red Onion, finely diced

  • 2 Garlic cloves, peeled & minced

  • 3 Cups Vegetable Broth

  • 1 Tbsp. Olive Oil

  • Juice of Half a Lemon

  • 1 Tbsp. Fresh Oregano, finely chopped


  1. Put aside about a 1/4 cup of diced tomatoes and cucumber.

  2. Combine remaining ingredients in a blender and process until fairly smooth, 2 - 3 minutes.

  3. Transfer to a bowl or pitcher and refrigerate for at least 30 minutes before serving.

  4. Pour into bowls or cups, garnish with the chopped vegetables and enjoy.
