Curried Apple and Zucchini Soup
Serves 2
Zucchini and apples are both low in calories, high in antioxidants, and are a good source of fibre, which promotes healthy digestion and aids in weight loss. This recipe can easily be doubled.
1 Apple, cored and diced - purchase an organic apple and leave the skin on
1 Medium Zucchini, diced
1 Small Onion, diced
4 Cloves Garlic, peeled and minced
1 Tbsp. Coconut Oil
1 - 2 Tsp. Curry Powder
3 Cups Vegetable Broth
1 Cup Coconut Milk
Sea Salt and Freshly Ground Black Pepper - to taste
Heat oil in a stockpot over medium heat, add the apple, zucchini, onion, garlic, and curry powder; cook for 5 minutes.
Stir in the broth; cook 5 minutes more.
Transfer to a blender, add the coconut milk and process until smooth.
Season with a little salt and pepper and enjoy warm.
