Curried Apple and Zucchini Soup

Serves 2

Zucchini and apples are both low in calories, high in antioxidants, and are a good source of fibre, which promotes healthy digestion and aids in weight loss. This recipe can easily be doubled.

  • 1 Apple, cored and diced - purchase an organic apple and leave the skin on

  • 1 Medium Zucchini, diced

  • 1 Small Onion, diced

  • 4 Cloves Garlic, peeled and minced

  • 1 Tbsp. Coconut Oil

  • 1 - 2 Tsp. Curry Powder

  • 3 Cups Vegetable Broth

  • 1 Cup Coconut Milk

  • Sea Salt and Freshly Ground Black Pepper - to taste

  1. Heat oil in a stockpot over medium heat, add the apple, zucchini, onion, garlic, and curry powder; cook for 5 minutes.

  2. Stir in the broth; cook 5 minutes more.

  3. Transfer to a blender, add the coconut milk and process until smooth.

  4. Season with a little salt and pepper and enjoy warm.
