Roasted Beets and Sweet Potato
The combination of beets and sweet potatoes make this easy to prepare dish a nutritional powerhouse. It is packed with potassium, magnesium, fibre, phosphorus, iron; vitamins A, B & C; beta-carotene, folic acid, just to name a few. Beets are touted as nature’s Viagra! Seriously. The Ancient Romans used beets medicinally as an aphrodisiac. Beets are an excellent source of the trace mineral boron, which is directly related to the production of sex hormones.

3 Beets, peeled and cut into chunks
2 Medium Sweet Potatoes, scrubbed and cut into chunks
3 Tbsp. Olive Oil
4 Cloves Garlic, peeled
1 Red Onion, diced
Sea Salt & Pepper to taste
Preheat oven to 400º.
In a bowl, toss the beets with 1tablespoon olive oil to coat. Spread in a single layer on a baking sheet.
Bake beets for 15 minutes in the preheated oven.
Mix remaining ingredients in a bowl, add to the beets.
Roast in the oven for approximately 45 minutes, stirring after 20 minutes until the vegetables are tender.
