Apple Cinnamon Oatmeal

Serves 1

  • 1/4 Cup Steel Cut Oats

  • 1/2 Cup Water

  • 1/2 Cup 3.8% Cow's Milk or Unsweetened Soy Milk

  • 1 Apple, skin-on, cored and diced

  • 1/2 Tsp. Ground Cinnamon

  1. Heat water and milk over medium high heat in small saucepan.

  2. When the milk begins to steam, but not boil, add the oats.

  3. Reduce heat to low and cover, stir occasionally to keep from sticking to bottom of pan.

  4. Let simmer and thicken for 15 - 20 minutes, or until desired consistency.

  5. Transfer to a bowl and stir in apple and cinnamon and enjoy warm.

Eggs and Avocado Toast

Serves 1

  • 2 Eggs

  • 1 Tbsp. Ghee, Coconut or Avocado Oil

  • ​1/2 Avocado, pitted and sliced

  • 1 Small Tomato, sliced

  • 2 Pieces of 100% Sourdough Rye Bread, toasted

  • 1 Tsp. Dried Parsley

  • Sea Salt and Freshly Ground Black Pepper

  1. ​Heat the ghee or oil in a skillet over medium-high heat.

  2. Gently crack the eggs into the skillet, being careful not to break the yolks.

  3. Cook until the whites are set and the yolk is runny, or however you prefer.

  4. Divide the avocado and tomato slices between the toasted bread, place an egg on each.

  5. Sprinkle the dried parsley and season with a little sea salt and freshly ground pepper and enjoy.

Chai Mango Smoothie

Serves 1

  • 3/4 Cup 3.8% Cow's Milk or Goat Yogurt

  • 1/2 Cup Mango, diced (you're welcome to use frozen)

  • 1/4 Tsp. Each Ground Cinnamon, Ground Cloves, Ground Ginger, and Ground Cardamom

  • 1/2 - 1 Cup Water
     

  1. Mix everything together in a blender.

  2. If it's too thick, add more water 1 tablespoon at a time to reach desired consistency.

  3. Transfer to a glass and enjoy!
