Sweet Potato Pancakes

Serves 2


  • 1 Medium Sweet Potato, peeled and grated

  • ¼  Small Onion, grated

  • 1 Clove Garlic, minced

  • 1 Egg

  • Sea Salt

  • Freshly Ground Black Pepper

  • 1 Tbsp. Olive Oil or Coconut Oil.

  • 2 Tbsp. Plain, Organic Yogurt


  1. Mix the grated sweet potato, onion, garlic, egg, sea salt and pepper in a bowl.

  2. Heat 1 Tsp. of oil in a skillet over medium heat.

  3. Spoon about 1 heaping Tbsp. of the potato mixture per patty into the hot oil.

  4. Flatten the patties with a fork, and fry until golden brown and crisp on the bottom, 5 to 8 minutes.

  5. Flip and cook on the other side, then set the cooked patties aside on the plate.

  6. Add more oil to the skillet for each pancake batch.

  7. Enjoy immediately with 2 Tbsp. of plain yogurt.
