Jan's Lemon Chicken

Serves 4

This is one of my favourite recipes. I have been making it for years. You can easily make this ahead and marinate the chicken overnight. Both garlic and onions are nutrition powerhouses. They’re anti-viral, anti-bacterial, anti-inflammatory, as well they help boost the immune system. The Vitamin C found in the lemon juice also provides immune support, which is essential during cold and flu season. For a delicious and nutritious meal, serve with roasted potatoes and a green salad.

  • 4 Small Chicken Breasts, boneless, skinless

  • 4 Lemons, juiced

  • 1 Lemon Sliced

  • 2 Tbsp. Olive Oil

  • 8 cloves garlic, minced

  • 1 Small Red Onion, diced

  • Bunch Fresh Rosemary

  • Ground black pepper to taste

  1. Preheat oven to 350º.

  2. Place chicken in a baking dish.

  3. Mix the lemon juice, olive oil, and diced red onion in a bowl, and pour over chicken.

  4. Allow to marinate for at least 30 minutes.

  5. Scatter the garlic cloves evenly around the chicken, lay the lemon slices and fresh rosemary on top.

  6. Place chicken in oven, bake uncovered for 35 - 40 minutes, or until juices run clear when pierced with a fork.

  7. Enjoy immediately.
