Chicken Lettuce Wraps

Serves 4

This tasty and easy to prepare recipe is packed with vitamins, minerals, protein, fibre and fun! You can add any vegetables you think will work with the recipe. Gluten-free soy sauce should be available at your local grocery store, be sure to read the label carefully. Enjoy!

  • 2 Chicken Breasts, skinless, boneless, cut in strips

  • 4 Cloves Garlic, minced

  • 1 Small Red Onion, diced

  • 1 Green Onion Stalk, sliced

  • 4 Cups Baby Spinach, chopped

  • 2 Red Pepper, seeded and diced

  • 2 Yellow Pepper, seeded and diced

  • 2 Tsp. Gluten-free Soy Sauce - season to your personal liking

  • 1 Tbsp. Coconut Oil

  • ½ Cucumber, finely diced

  • 8 Lettuce Pieces, separated

  1. Heat oil in a non-stick skillet.

  2. Stir in garlic and onions, cook for 2 minutes.

  3. Stir in the peppers, cook for 2 minutes.

  4. Stir in chicken and spinach, season with soy sauce, cook until chicken is completely cooked through, stirring often.

  5. Remove from heat.

  6. To eat, place two lettuce pieces/wraps on your plate, scoop some of the chicken mixture onto the lettuce cup, add some diced cucumber and roll like a taco and enjoy.
