Chicken Lettuce Wraps
Serves 4
This tasty and easy to prepare recipe is packed with vitamins, minerals, protein, fibre and fun! You can add any vegetables you think will work with the recipe. Gluten-free soy sauce should be available at your local grocery store, be sure to read the label carefully. Enjoy!
2 Chicken Breasts, skinless, boneless, cut in strips
4 Cloves Garlic, minced
1 Small Red Onion, diced
1 Green Onion Stalk, sliced
4 Cups Baby Spinach, chopped
2 Red Pepper, seeded and diced
2 Yellow Pepper, seeded and diced
2 Tsp. Gluten-free Soy Sauce - season to your personal liking
1 Tbsp. Coconut Oil
½ Cucumber, finely diced
8 Lettuce Pieces, separated
Heat oil in a non-stick skillet.
Stir in garlic and onions, cook for 2 minutes.
Stir in the peppers, cook for 2 minutes.
Stir in chicken and spinach, season with soy sauce, cook until chicken is completely cooked through, stirring often.
Remove from heat.
To eat, place two lettuce pieces/wraps on your plate, scoop some of the chicken mixture onto the lettuce cup, add some diced cucumber and roll like a taco and enjoy.
