Jan's Chili Recipe

This is a great recipe for a Super Bowl party. It's easy to make, loaded with vitamins, minerals, fibre and protein, plus it tastes great!
Jan's Chili
Serves 4
1 Lb. Lean Ground Beef
1 Large Onion, diced
4 Cloves Garlic, minced
1 Tbsp. Olive Oil
1 Cup Mushrooms, sliced
4 Celery Stalks, sliced
1 Red Pepper, seeded & diced
1 Yellow Pepper, seeded & diced
1 14oz. Can Red Kidney Beans, drained
1 14oz. Can Diced Tomatoes
1 6oz. Can Tomato Paste, sugar-free
2 tsp. Chili Powder, more if you like heat
Heat a skillet and add the olive oil, garlic, and onion, cook about 5 minutes.
Stir in the ground beef, cook until browned.
Add the remaining ingredients, cover and simmer about 20 minutes.
Add water if it is too thick, a tablespoon at a time.
Season the chili with salt and pepper.
Enjoy warm.
