Portabello Mushroom Pizzas


Portabello Mushroom Pizzas Serves 4 This healthy recipe is perfect for incorporating more veggies into your diet as well as your children’s. This would also be delicious cooked on the BBQ. ● 4 Large Portabello Mushrooms ● 2 Tbsp. Olive Oil ● 4 Garlic Cloves, minced ● 1 Medium Onion, chopped ● 4 Medium Tomatoes, diced ● 2 Cups Baby Spinach ● 2 Tsp. Dried Basil ● 1 Tbsp. Goat Feta 1. Preheat the oven to 400º degrees. 2. Heat up the olive oil over medium heat in pan. 3. Add onion to the pan and stir until it's golden brown. 4. Add tomatoes, spinach and garlic to the pan, cook for about 5 minutes. 5. Stir in the basil. 6. Lightly grease a baking sheet with olive oil and place the portobello mushrooms bottom side up with stems removed. 7. Add the mixed vegetables into each mushroom and top with the goat feta. 8. Place the baking sheet into the oven and bake for 12 minutes. 9. Serve warm. Recipe created by Janet L.
