Mexican Chickpea Salad

Serves 4

This delicious salad makes for a quick and healthy meal for 2, or side dish for 4 on a hot summer night. It is also a good source of vitamins and minerals, calcium, protein, good fats, and fibre.

• 2 Cups Cooked Chickpeas, rinsed and drained • 1 Lrg. Tomato, chopped • ⅓ Cup Red Onion, diced • 1 Avocado, diced • 2 Tbsp. Olive Oil • 1 Tbsp. Fresh Lime Juice • ¼ Tsp. Chili Powder • ¼ Tsp. Sea Salt • Freshly Ground Black Pepper 1. In a bowl, whisk the oil, lime juice, cumin, chili powder, sea salt and black pepper. 2. Add chickpeas, tomatoes, onions and toss until combined. 3.
