Horseradish Mashed Potatoes


Horseradish Mashed Potatoes Serves 4 Red potatoes are a rich source of vitamins, minerals and fibre, have nominal amounts of fat and sodium and are completely cholesterol free. Much of the nutritional value of a potato is found in its skin. Whenever possible, buy organic red potatoes and make sure you eat the skin. This is a nice side for a beef or lamb dinner. • 6 Medium Red Potatoes, scrubbed and quartered • 2 Tbsp. Olive Oil • 1 Tbsp. Horseradish • Water as needed • 4 Tbsp. Chicken Broth • 2 Tbsp. Plain Yogurt • Sea Salt and Freshly Ground Black Pepper to taste 1. Place potatoes in a large pot and cover with water. 2. Bring to a boil and allow potatoes to simmer until very soft, about 20 minutes. 3. Drain water and mash potatoes with olive oil and yogurt, until smooth and fluffy. 4. Mix horseradish into potatoes, pour in broth and continue to mash until mixture is light and fluffy; season with salt and pepper to taste and serve hot.
