Ginger Carrots

Serves 4

  • 4 Cups Chopped Carrots

  • 2 Tbsp. Olive Oil

  • 1 Tbsp. Honey

  • 1 Tsp. Ground Ginger, or more to taste

  • 1 Tsp. Lemon Juice, or more to taste

  1. Preheat oven to 350°.

  2. Place carrots in a shallow baking dish.

  3. Mix the remaining ingredients together, stir into carrots.

  4. Bake for 40 minutes, or until tender-crisp.

  5. Serve warm.
