4 Cups Chopped Carrots
2 Tbsp. Olive Oil
1 Tbsp. Honey
1 Tsp. Ground Ginger, or more to taste
1 Tsp. Lemon Juice, or more to taste
Preheat oven to 350°.
Place carrots in a shallow baking dish.
Mix the remaining ingredients together, stir into carrots.
Bake for 40 minutes, or until tender-crisp.
