Crustless Blueberry Quiche

Serves 4

Blueberries contain antioxidants, which work to neutralize free radicals linked to the development of cancer, cardiovascular disease, and other age-related conditions. This recipe is easy to make, delicious, and would be a terrific addition to a brunch menu or as a dessert.

  • 1 ½ Cups Fresh Blueberries

  • ¼ Cup Coconut Milk

  • 6 Eggs

  • 1 Tbsp. Fresh Thyme, chopped

  • ½ Tsp. Sea Salt

  • ½ Cup Goat Cheese, crumbled

  • Freshly Ground Black Pepper

  • Olive Oil or Coconut Oil

  1. Preheat oven to 350°.

  2. Lightly grease a pie plate with the oil and place on a cookie sheet.

  3. In a bowl, beat together the eggs, coconut milk, sea salt and thyme. Fold in the blueberries

  4. Gently pour into the pie plate.

  5. Crumble goat cheese over top.

  6. Bake for 35 minutes, or until a knife inserted in the centre comes out clean.

  7. Enjoy warm.
