A quick and healthy recipe that is gluten free, packed with vitamins, minerals, fibre, and flavour!
3 Medium Zucchinis, cut into wedges
2 Eggs, beaten
1 Cup Finely Ground Almonds
Freshly Ground Black Pepper
Preheat oven to 350º.
Line a cookie sheet with parchment paper, you might need two cookie sheets, it's very important to line the cookie sheet with parchment paper.
Place ground almonds onto a plate, season with sea salt and black pepper.
Dip the zucchini pieces one at a time into the beaten eggs, roll in the ground almonds and place on the cookie sheets, in single layers.
Bake in the oven for 10 minutes, turn over each zucchini fry and cook for another 10 minutes, keep an eye though as they can burn.
