Roasted Garlic Soup

Serves 4

Garlic is not only delicious, but it also helps to strengthen the immune system. It is anti-bacterial, anti-viral, and anti-fungal. Prepare this tasty and nutritious soup the next time you feel a cold or flu bug coming on.

• 4 Bulbs Garlic • ¼ Cup Olive Oil • 2 Tbsp. Coconut Oil or Olive Oil • 1 Red Onion, chopped • 4 Cups Chicken or Vegetable Broth • Sea Salt and Freshly Ground Pepper, to taste

1. Cut off top 1/4 inch of each garlic head. Place in a small, shallow baking dish. Drizzle ¼ cup olive oil over. Bake at 350° until golden, about 1 hour. Cool slightly. Press individual garlic cloves between thumb and finger to release. Chop garlic.

2. Heat coconut or olive oil in large saucepan over medium heat. Add garlic, and onion; sauté until onion is translucent, about 8 minutes. Stir in broth. Simmer 20 minutes, stirring occasionally. Cool slightly.

3. Season with salt and pepper. Ladle into bowls. Enjoy immediately.
