Lemon Chicken

Serves 2

 

  • 2 Small Chicken Breasts, boneless, skinless

  • 2 Tbsp. Sicilian Lemon Balsamic Vinegar

  • 2 Tbsp. Garlic Olive Oil

  • ½ Small Red Onion, diced

  • 1 Tsp. Rosemary or Basil Olive Oil

  • Freshly Ground Black Pepper to taste

 

  1. Preheat oven to 350º.

  2. Place chicken in a baking dish.

  3. Mix remaining ingredients in a bowl, and pour over chicken.

  4. Allow to marinate for at least 30 minutes.

  5. Place chicken in oven, bake uncovered for 35 - 40 minutes, or until juices run clear when pierced with a fork.

  6. Enjoy immediately.
