Chicken Lettuce Wraps

Serves 2


  • 2 Small Chicken Breasts, skinless, boneless, cut in strips

  • 2 Cloves Garlic, minced

  • 1 Small Red Onion, diced

  • 2 Cups Baby Spinach, chopped

  • 1 Red Pepper, seeded and sliced in strips

  • 1 Yellow Pepper, seeded and sliced in strips

  • 2 Tsp. Low Sodium Soy Sauce

  • 1 Tbsp. Olive Oil or Coconut Oil

  • ½ Cucumber, finely diced

  • 4 Lettuce Pieces, separated


  1. Heat oil in a non-stick skillet.

  2. Stir in garlic and onions, cook for 2 minutes.

  3. Stir in the peppers, cook for 2 minutes.

  4. Stir in chicken and spinach, season with soy sauce, cook until chicken is completely cooked through, stirring often. 

  5. Remove from heat.

  6. To eat, place two lettuce pieces/wraps on your plate, scoop some of the chicken mixture onto the lettuce cup, add some diced cucumber and roll like a taco and enjoy.

  7. Place half of the chicken mixture as well as diced cucumber into a tupperware container, place the lettuce into another tupperware container, and store in the refrigerator.
