Bruschetta Cod
Serves 1

1 - 6 oz Cod Filets*

1 Tomato, seeded & diced

1 Tbsp. Olive Oil

4 Fresh Basil Leaves, finely chopped

1 Clove Garlic, minced
-
½ Red Onion, finely chopped

Freshly Ground Black Pepper - to taste

Preheat oven to 400°.

Place cod in a baking dish.

Mix remaining ingredients in a bowl.

Pour mixture over cod.

Cover with tinfoil.

Bake for 20 minutes, or until cod flakes easily with a fork.
*You can substitute any white fish for cod.
