Bruschetta Cod

Serves 1

 

  • 1 - 6 oz Cod Filets*

  • 1 Tomato, seeded & diced

  • 1 Tbsp. Olive Oil

  • 4 Fresh Basil Leaves, finely chopped

  • 1 Clove Garlic, minced

  • ½ Red Onion, finely chopped

  • Freshly Ground Black Pepper - to taste

 

  1. Preheat oven to 400°.

  2. Place cod in a baking dish.

  3. Mix remaining ingredients in a bowl.

  4. Pour mixture over cod.

  5. Cover with tinfoil.

  6. Bake for 20 minutes, or until cod flakes easily with a fork.

 

*You can substitute any white fish for cod.
