Bean Chili

Serves 2


  • 1 Large Onion, diced

  • 1 Tbsp. Garlic Olive Oil

  • 2 Celery Stalks, diced

  • 1 Red Pepper, diced

  • 1 Cup Canned Red Kidney Beans, drained and rinsed

  • 1 Cup Canned Cannellini Beans, drained and rinsed

  • ½ Cup Corn Niblets

  • 1/2 Cup Salsa

  • 1 tsp. Cayenne Olive Oil (more if you like it spicy)


  1. Heat a skillet and add the garlic olive oil, and onion, cook about 5 minutes. 

  2. Add the remaining ingredients, cover and simmer about 20 minutes. 

  3. Add water if it is too thick, a tablespoon at a time. 

  4. Transfer half to a bowl.

  5. Allow the rest to cool, then place in a tupperware container and store in the refrigerator.
