Avocado Boats
Serves 4

Avocados are a delicious, nutrient-dense fruit. They have anti-inflammatory properties, are a good source of fiber, vitamins C, and E, and are higher in potassium than bananas. As well, avocados are a source of monosaturated fats, a “good fat”, which raises good cholesterol and lowers bad cholesterol in your blood, reducing your risk of stroke and heart disease.

• 2 Avocados, cut in half, peeled, pit removed
• 2 Tomatoes, seeded & diced
• 1/4 Cup Shallots, diced
• 2 Tbsp. Sunflower Seeds
• 2 Tbsp. Olive Oil
• 1 - 2 Tsp. Lemon Juice
• 4 Cups Spring Mix Lettuce
• Freshly Ground Black Pepper

1. Divide the lettuce among four plates, place each avocado half on top.
2. Mix the rest of the ingredients together and divide evenly among the avocado halves.
3. Season with black pepper.
4. Enjoy immediately.
